Tofu Chocolate Mousse

Ready in 5-10 minutes (not including chill time)

Ingredients

  • 3.5 oz 70% Dark chocolate, chopped
  • 1 package (12 oz) Soft silken tofu, room temperature, drained
  • 2 tablespoons Maple Syrup

Tips

  • Customize the flavor of the mousse by adding vanilla, almond, orange, or peppermint extract, or ground spices like cinnamon, nutmeg, or cayenne pepper.

Instructions

  1. Melt the chocolate in a microwave in 15-20 second intervals, stirring each time, until the chocolate is completely melted.  Set aside.
  2. Meanwhile, blend the silken tofu and maple syrup in a food processor until very smooth.
  3. Add the melted chocolate to the tofu and blend until everything is well-combined.
  4. Scoop mixture into 4 ramekins and refrigerate for at least 30 minutes.
  5. (Optional) Garnish with your topping of choice: chocolate shavings, cocoa nibs, cocoa powder, fruit, nuts, cookie crumbs, granola, etc.
