Ingredients

  • 1 lb fish of choice. We recommend shrimp, bass, cod, halibut, mahi-mahi, or flounder
  • 1 jalapeno, deseeded and diced small
  • 1/3 cup fresh lime juice 
  • 1/3 cup fresh lemon juice 
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup small red onion
  • 1/2 cup cucumber, peeled and diced 
  • Salt and pepper, to taste

Instructions

  1. Slice the fish into small, bitesized cubes.
  2. In a large bowl, add the fish, lime and lemon juice, onion, bell pepper, and jalapeno. Mix for 5 minutes so that the lime juices will cook the fish.
  3. Season with salt and pepper to taste.
  4. Add cucumber and serve immediately on a bed of greens. Top with cilantro for garnish.
  5. Add seasonal items like mango or pineapple for extra flavor!
