Roasted Squash and Onions

Ingredients

  • 2 yellow squash
  • 2 zucchini squash
  • 1 red onion
  • 2 tsp olive oil
  • 1 tsp Italian seasoning
  • ¼  tsp salt and pepper.

Tips

  • Use a variety of seasonings to keep the vegetables interesting.

Instructions

  1. Preheat the oven to 400.
  2. Slice the squash.  Roughly chop the onion.
  3. Toss the vegetables with the olive oil, Italian seasoning and salt and pepper.
  4. Arrange the vegetables in a single layer on a sheet pan.  Use parchment paper for easy cleanup.
  5. Cook for 15-20 minutes or until tender.
