Roasted Brussels Sprouts

  • This is a non-starchy cruciferous vegetable high in fiber and vitamins and minerals.

Ingredients

  • 12 oz brussels sprouts
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • ½ -1 tsp crushed red pepper flakes.

Tips

  • For vegan brussels sprouts substitute maple syrup or agave for the honey.

Instructions

  1. Preheat the oven to 400.
  2. Trim the stems from the brussels sprouts and cut in half. Discard loose leaves. 
  3. Toss the brussels sprouts with olive  oil.
  4. Arrange the brussels sprouts in a single layer on a sheet pan. Use parchment paper for easy cleanup.
  5. Cook for 30 minutes or until tender. 
  6. Toss on the pan with honey and crushed red pepper flakes.
