Ingredients

  • 2 heads of broccoli, chopped
  • 1 lb chicken sausage
  • 8  oz pasta (I recommend penne, fusilli, rigatoni, or cavatappi)

Tips

  • Switch up the sausage: opt for a sweet or spicy sausage for different flavors.
  • Additionally, you could use a vegan or plant based sausage alternative.

Instructions

  1. Steam or roast the chopped broccoli. To steam, place in a steamer basket over boiling water, cover and cook for ~5 minutes or until broccoli is tender. To roast, place on a prepared baking sheet, drizzle with olive oil and bake for ~30 minutes or until broccoli is starting to crisp.
  2. Slice sausage into bite sized pieces and add to a medium saute pan with a drizzle of olive oil. 
  3. Cook the sausage on medium heat until it starts to crisp, turning occasionally with a spatula. This should take ~10 minutes.
  4. Cook pasta per box instructions
  5. Add cooked pasta and broccoli into the pan with the sausage. Toss until everything is combined
  6. Option to top with shredded parmesan cheese
