Harvest Turkey Chili

Ingredients

  • 1 lb ground turkey breast
  • 2 Tbsp olive oil
  • Yellow pepper, chopped
  • Onion, chopped
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • 2 tsp oregano
  • ½ tsp salt
  • 2 cans black beans, rinsed/drained
  • 1 can Ro-tel tomatoes
  • 1 can pumpkin puree
  • 3 cups low sodium chicken broth

Tips

  • For a vegan chili, use veggie crumbles.

Instructions

  1. Saute onions and pepper in olive oil in a large skillet over medium heat until softened.
  2. Add turkey and break up with a spoon as it cooks until no pink remains. Stir in all of the spices and cook for 1 more minute.
  3. Place in a soup pot or crockpot.
  4. Stir in black beans, tomatoes, pumpkin and broth.
  5. Cook for 4 hours on the stove or all day on low in a crockpot.
