Chickpea Veggie Burger

Ingredients

  • 2 cups (19 oz can) chickpeas, drained, rinsed and mashed
  • ⅓ cup red onion, finely diced
  • 1 cup zucchini, grated 
  • 3 Tbsp finely chopped cilantro
  • 3 Tbsp red wine vinegar
  • 1 Tbsp sriracha sauce
  • 2 Tbsp peanut butter or tahini 
  • 1 tsp cumin
  • 1 tsp garlic
  • 2 tsp black pepper 
  • ½ tsp sea salt
  • 1 cup quick oats
  • 2 Tbsp extra virgin olive oil
  • Whole wheat bun, sandwich thin or lettuce wrap and toppings of choices such as onion, tomato, and avocados.

Tips

  • Cooked burgers can be stored in the fridge for up to 4 days or in the freezer for 3 months. Try adding leftovers to salad for a quick lunch.

Instructions

  1. Preheat oven to 400 F.
  2. Drain and rinse chickpeas, place in  large bowl and mash with a fork.
  3. Add all ingredients into the bowl and use hands to mix very well.
  4. Form into 6-8 patties and place on a greased baking sheet.
  5. Bake in oven for 20-30 minutes, flipping half-way through.
  6. Serve on a toasted whole wheat bun or in a lettuce wrap with your favorite burger toppings such as lettuce, onion, tomato, avocado.
