Arroz de Grandules

Ingredients

  • 2 tbsp olive oil
  • 2 slices of turkey bacon (diced)
  • 2 tbsp Sofrito
  • 4 oz. tomato sauce (no salt)
  • 1 can of Gandules (pigeon peas – low sodium)
  • 1/2 tsp. garlic powder
  • 1/2 tsp. Cumin
  • 1/4 tsp. oregano
  • 1/4 tsp. turmeric
  • 1 envelope Sazon seasoning (no MSG)
  • salt & pepper (to taste)
  •  3 cups brown rice
  •  4 1/2 cups water

Instructions

  1. Soak 3 cups of brown rice in water and set it to the side.
  2. Heat 2 tbsp of olive oil in a pot. Add diced turkey bacon and 2 tbsp. of Sofrito. 
  3. Once turkey bacon is cooked add  tomato sauce, gandules, Sazon seasoning, garlic powder, cumin, oregano, turmeric and salt & pepper to taste. Stir.
  4. Drain the water from your brown rice and add the rice to the pot. Stir. 
  5. Add water to the pot and stir, there should be about an inch from the top of the water level to the rice
  6. Bring the pot to a boil, then simmer and cook uncovered for about 10 minutes, until the water evaporates. Do not stir. 
  7. Cover and place on low for 20-25 minutes, then stir.
